Ingredients
2 cups Original Bisquick mix
1 cup milk
2 eggs
1/2 stick butter
12 tbsp filling: try Nutella, fruit jam, or cream cheese
confectioners sugar for sprinkling
maple syrup for serving
Instructions
Preheat oven to 400 degrees. Generously coat the bottom & sides of a 12-muffin tin with butter. Make Bisquick pancakes per instructions on the box. Fill each cup in the muffin tin half-way. Add 1 tbsp of filling to the middle of each muffin, then cover with the remaining pancake mix. Bake 20 minutes. Remove from oven, place on serving dish & use a flour sifter to sprinkle with sugar. Serve with warm syrup.

Hey! Great idea. I make Pancake Bars by just baking in a brownie pan (got the idea from Big Red Kitchen), and, I’ve made Waffle Battle in mini cupcake tins, but I didn’t think pancake batter would raise enough in a tin. Glad you tried it and shared it with us. I’ll try this for breakfast on the go during the work week. In fact, some blueberries would be great — better than a boring blueberry muffin.
I just got the prettiest teired cupcake stand, and i can’t wait to use it, but i didn’t want cake in the house with the hubby off on business. These will be a great alternative!! Can’t wait to have company so i can make them in the morning on my pretty stand. Just thinking about it makes me feel put together.

In the oven as I type. They look fantastic. I doubled the recipe and filled half with strawberry jam, half with apple pie filling.
