I love to make this salad in the summer when plums are in season, but have found that if I soak off-season plums (or any other fruit, for that matter) in a bit of sugar in the refrigerator for a few hours it turns out almost as good. If you can’t find black plums, red plums are fine, or even sweet red grapes.
One of the best parts of this recipe is the homemade salad dressing. It’s really quick, easy & doesn’t require schlepping out the blender or food processor. Try substituting brown sugar for the mustard to make it a sweet dressing.
Ingredients
1 large package of Arugula
1 medium package of Goat Cheese
3 Black Plums, Sliced (soak in 1/2 cup of sugar in refrigerator for 3 hours, if desired)
1 cup Walnuts
1/3 cup Extra Virgin Olive Oil
1/3 cup Balsamic Vinegar
1 Tbsp Dijon Mustard
1 Tsp Fresh Ground Pepper (I prefer to use Jane’s Krazy Mixed-Up Pepper)
Spring It!
Directions
Wash & dry the arugula, put it in a serving bowl. Add sliced plums to the top of the arugula. Crush up the walnuts in a zip-top bag & add them to the bowl. Break up the goat cheese, and add to the top of the salad.
Mix the oil, vinegar, pepper & mustard together & beat with a fork until emulsified. Add to the salad right before serving.
