Salmon with Bok Choy & Eggplant

Quick Idea: Buy yourself some toasted sesame oil.  When making savory meal, substitute it for olive oil.  Trust me, you’ll love it!

Salmon, Bok Choy & Eggplant with a Sesame-Honey Glaze
(I am a “some of this & that” kind of cook – sorry this isn’t more exact)

  1. Mix even parts honey, soy sauce & sesame oil to make a marinade.  Add red pepper flakes.  Keep some extra on the side for a glaze at the end.
  2. Soak salmon in one bowl & veggies in another (10-20 min)
  3. Pop some brown rice on the stove (skip the butter & oil)
  4. Cook the veggies in a foil bag, with lots of the glaze (to create steam) – I recommend the grill, but oven is fine, too
  5. Cook salmon however you choose – grill, oven, or skillet
  6. When rice is done, add a splash of sesame oil, plus salt & pepper
  7. Plate it up, using some of the glaze on top

If you have leftover rice, it will be tasty enough to eat alone as lunch the next day.  Just be careful not to drop it on the floor at work!
